Healthy Kids…Encompass is a Healthy Choice.
Encompass is proud to be a supporter of Green Bay's Where Kids Count community initiative to improve the health of our kids. Several community leaders and service providers came together to "think bold", challenge the childhood obesity epidemic, and focus on healthy eating and nutrition, fitness, and the importance of establishing healthy habits.
Encompass has been an active practitioner and promoter of intelligent, healthy eating for many years. Our Director of Food Services, Dawn Rose, ensures the kids at Encompass centers have balanced meals, full of fresh fruits and vegetables, and correct portion sizes based on USDA guidelines. Meals are served family style to encourage conversation, sociability, and healthy eating habits. Information about the importance of living a healthy lifestyle is regularly given to parents. Of course, lots of physical activity and outside play are incorporated throughout each day at Encompass.
The rate of childhood obesity has fully tripled in the past thirty years in the United States. The Brown County Kids Count Initiative wants to change this trend in a big way. To that end, "54218" was created. You will be hearing much more about this, but each of us can start now by teaching and practicing "54218". Knowing what each of these numbers stands for will make it easier and more fun to begin a healthier lifestyle for the whole family.

Broccoli-Bacon Salad
1 clove minced garlic ¼ cup low fat mayo ¼ cup reduced fat sour cream 2 tsp cider vinegar 1 teaspoon sugar 4 cups finely chopped broccoli crowns 1 8 oz. can sliced, rinsed, and chopped water chestnuts 3 slices cooked crumbled bacon 3 tablespoons dried cranberries Salt and pepper to taste Whisk garlic, mayo, sour cream, vinegar, and sugar in large bowl. Add remaining ingredients Stir gently to coat and serve. Store in refrigerator. (6 servings - only 89 calories per cup!)
